Questions about the village

Hello.

I came to a village where the fields were not dying, far from the initial respawn point.
But there were only zombie villagers in that village.
In addition, the fields were only planted with wheat.
Is there only wheat in the village for zombie villagers?
If I go to another village, will there be normal villagers and crops?

All populated villages will be populated by zombie villagers. They need to have their souls put back to convert into regular villagers again.

Regarding crops, all villages will come with wheat, but only some will have carrots or potatoes (and never both) so you'll have to search to find more to get the other crops.
