You need an axe to craft wooden plants. It counts as the use of the axe. (like the scissor+web recipe)

They don´t seem to use wool as building material, even through they have sheep of each color.

It shows tools and armors durability, wich is an exploit since it removes the aspect of "how many uses can use this tool without risking it to break?"

Players riding stuff will keep it when logging off (ie, if you’re on a minecart and log off, you will take that minecart with you)
I think that´s nice, but not that much needed.

Jup, I think everything works fine.
In one of my maps I play with Adventure Mode on, and Hardcore Spawn disabled, but Bonus chest on.
You can do everything as normal, except breaking blocks without the right tool
