the rest of the villagers are useless apart from the priest, but even him is useless after you reach the end. I definitely would not say they're useless, since they're the only way to get their respective scrolls, plus getting mycelium without a mushroom biome I would at least agree that it's a goo...

Trade, and breed more villagers of that caste so that you can have multiple trade options to choose from (when one goes cold with enchants, start leveling the next one.)

You have to till a grass block to have a chance of finding hemp seeds, but I don't think your elevation matters at all. Well, for some reason, I had a patch of grass spontaneously spawn within my hemp module of my sub-lagoon greenhouse. Construction delays allowed it to propagate to quite literally...

Depending on how your coop is setup, you might be able to avoid the hatchlings becoming neck deep in the walls of their pen. I'm just curious what the wolf spawn rules are. As you can imagine, this is a search string that generates essentially nothing but false positives. Are wolves biome specific? Update -- in today's play session, I did manage to locate ONE diamond (I dug out in a 3-block radius in all directions around it just to make sure... :( ) and also a single redstone block.
