You don't need 100% coverage with vines. I usually start with 1 trap per 2-4 blocks (I keep it simple with 1 wide beams with 2 gap on either side). Yeah, the other key thing which makes ghast-jump-starting portals, is the fixed aim they have now. Damn things can pretty much thread a needle with those fireballs.

When you say 'were' how long ago are we talking? There was a bug a while back which caused some cycling of spawn locations, but I'm pretty sure that has been squashed since then.
