Okay, just built it in my test world. You have to set and then reset for both doors to update properly. Once that's done, they'll alternate, one open, one closed.

The reason that it's called an RS latch is for the two inputs, Set and Reset. Set sets the latch's output to high, reset sets it to low. No matter how many times you step on the Set plate, the doors are only going to toggle once.
